Create one focal point
Let the fillet lead the composition. A slightly off-centre position usually creates more tension than rigid centring.
Use sauce to connect
Treat sauce as a controlled line or base. It should connect the components visually rather than drown the meat.
Group the sides
Potatoes, vegetables or salad work better in deliberate groups with clear direction than when scattered around the plate.
Keep negative space
Do not fill every centimetre. Empty space makes the plate feel more precise and gives the ingredients more value.
